I rarely choose nut roast in a restaurant because they are usually dry and tasteless. This is amazing! I make a batch, slice it into about 8 and freeze for another day. A great way to get plant based protein. You can use it for a roast dinner, have it with a salad for lunch or take it on a picnic and eat it cold.
Ingredients
1 leek finely shredded
1 onion finely shredded
2 carrots grated
2 cloves of garlic
1 tbsp olive oil
300gms mixed nuts
180gms chestnuts
large handful of apricots
4 tbsp nut butter
a dash of plant milk
1 veg stock cube
Method
Fry the leeks, onion, garlic and carrots in the olive oil until soft.
Blitz the nuts and the stock cube in a food processor or chop them very finely.
Chop the apricots and chestnuts into small pieces.
Mix all the ingredients in a large bowl until they are combined
Line a loaf tin with greaseproof paper and pack in the mixture
