Butter Chicken or Tofu


2 chicken breasts or a packet of Tofu
1/2 cup of cashew nuts
1/2 cup of milk or plant milk
1 tbsp minced ginger
2 cloves of garlic
1 onion
1 tsp chilli powder (adjust to your own spice level)
1 tsp turmeric
1 tsp ground coriander
1/2 tsp cinnamon
1 tin of chopped tomatoes
1 tin of chickpeas
Cook off the chicken in some olive oil (or toss the tofu in olive oil and oven bake or put in an air fryer until crisp on the outside but still soft inside), add onion and spices then add tinned tomatoes and chickpeas. Bring to bubbling then turn down to simmer. Meanwhile, blend the cashews with the milk till smooth. Then add to the pan. Simmer for about 15 mins. Serve with brown rice and some green veg.
