Massaman Curry

You can make this chicken, tofu or just vegetables, so I will just give you the sauce ingredients and you can add what you like.

Ingredients:

1/2 jar of massaman curry paste
1 tsp cumin powder
1 tsp ground coriander
1/4 tsp cinnamon
1 tin reduced fat coconut milk
2 tbsp peanut butter
1 large onion or a bunch of spring onions
1 large potato or equivalent new potatoes
2 large carrots
1 tbsp sriracha sauce
Then any veg you like, I use peppers, green beans, sugar snap peas, baby corn etc.
1 stock cube in about 1 cup of water

Method:
Cook off the onion and spices in a little olive oil, then stir in the curry paste. Add the stock and coconut milk and the root veg and cook till the potatoes and carrots starting to soften. Add the softer veg like green beans, peppers etc if you are using them then simmer till it is all cooked. Add the peanut butter and if it is not spicy enough add some sriracha sauce or chilli. Serve with brown rice and lots of green veg.
