Sweet Potato, Chickpea and Harissa Salad

2 Large sweet potatoes
1 tin chickpeas
2 tsp harissa paste
1 tbsp tahini paste
Juice of a lime
1 tsp paprika (or smoked paprika)
1 tsp cumin
1 pinch of chilli flakes
a drizzle of olive oil

Peel and dice sweet potatoes, drain the chickpeas, sprinkle with the cumin, paprika and chilli flakes. Drizzle with olive oil and toss together till coated. Spread out on a baking tray and bake at 200 degrees for 25-30mins. While you are waiting make the dressing by mixing harissa paste, tahini and lime juice together. When the sweet potatoes are soft, mix together with the dressing. Serve hot or cold on a large mixed salad.
